Would this also allow us to add extra documents to the Profile after the license has been taken out? For example, if we create a new document one month in to a 12-month license, could we encrypt using the same Profile as all the other documents and make that new document available to that person for the remaining 11 months of their annual license?

Yes, you can do the things as you mentioned above. Whenever you add new documents protected by the same Profile as the ones before, the users don't need to get new license for opening the new documents. They can use the license which was for the old documents protected by the same Profle to open the new documents.
